It's round, not super big and has a texture and taste that's kind of like a cross between a sponge cake and a baked cheesecake. Uncle Tetsu's is fast becoming an institution in Sydney as they dispense their unique version of cheesecakes from their shop. The queues prove people like them too.

So, we wanted to see what all the hype was about. The best way to do this - grab one of their cheesecakes ourselves and taste test it - as in devour it! You know it's a genuine one too because they all have a version of the Uncle Tetsu stamp on top. We were getting ours there so there wasn't any doubt. 

The first thing you notice is that these cheesecakes aren't massive. They are a decent size though and perfect for two to four people - depending on how hungry you all are. They're light and fluffy too, unlike a traditional baked cheesecake. We thought it felt and tasted like a fusion of sponge cake and cheesecake. It certainly had the cheesecake taste but to some extent more of a sponge texture. The first mouthful takes you by surprise, but tempts you to take more. We weren't sure at first but by the end we loved it.

While we were in the queue for the cheesecake we also spied their honey madeleine's. These were like a muffin sized cupcake, not iced, for sale individually or in a four pack. We decided to limit ourselves to just one, as we were also getting a cheesecake! Hmmm - such restraint! The madeleine had the heavier consistency of a muffin or friand and a lovely flavour too.  

From time to time Uncle Tetsu's introduce a new variety of cheesecake too. They've had honey cheesecakes as well as honey black tea cheesecakes. They do both sound good - don't they?
